The Perfect Sandwich For Football/Labor Day Weekend

In this house we have no Labor Day plans because it is the first LSU game Saturday night and the world will stop turning for several hours.
We (Brian and Christopher) have decided on cooking a Jambalaya on Saturday which I have to say I am pretty pumped up about.

Speaking about food, I wanted to share THE BEST SANDWICH EVER recipe.

Summer Seafood Roll

1 lb peeled/deveined shrimp
2 ribs of celery, finely chopped
1/4 c Italian parsley, finely chopped
juice of 2 lemons
2 tsp + 1/3 c evoo
3 tbl + 2 tsp herb garlic butter divided
1/2 tsp kosher salt divided
1/4 tsp pepper
1/8 tsp truffle oil
4 Bakery hot dog buns

Preheat large saute pan on medium high heat. Place 2 tsp evoo and 1 tbl herb butter in pan, then add shrimp and cook 2-3 min or until shrimp are opaque.

I wish you could smell this

Transfer shrimp and juices to medium bowl and chill for 4-5 minutes.

Spread 2 tsp of herbed butter inside each bun and toast buns in the same saute pan until golden.

Whisk together lemon juice, 1/3 c evoo, truffle oil, 1/4 tsp salt, and pepper.

Stir into shrimp the celery, parsley and remaining 1/4 tsp of salt. Add dressing and toss to coat.

Fill buns and watch people go crazy.

Have a great weekend and I promise this recipe will make you a rock star.
